A Donegal chef with a glittering résumé has settled back home.

But instead of fine dining, Patrice Kelly has now specialized in roadside food.

The 31-year-old is the inventor of the “Lattea Da” delivery truck on the Letterkenny-Ballybofey road. Patrice stands out from the crowd by offering a product that cannot be found anywhere else in Donegal, or even the North West – bubble tea.

A roadside van wasn’t an obvious career move for an accomplished chef like Patrice.

After graduating from Killybegs Catering College, Patrice took her culinary career ambitions around the world. She has worked on a luxury cruise in Europe, in exclusive ski resorts in the French Alps and as a private chef has led teams for very wealthy clients in London and Saudi Arabia. Patrice has found herself catering to dinner parties and events attended by Presidents, British Royalty and A-list stars like Jackie Chan.

Like a woman from Dooballagh It is thanks to hard work, prestigious training and a thirst for adventure that such elite customers come about.

“In my life, I’ve never liked taking the direct routes,” says Patrice Donegal daily.

Her passion for Asian cuisine and bubble tea blossomed during a trip to Beijing. Patrice worked in the famous Nobu restaurant with world-famous sushi master chefs. During this time in China, too, she learned generations-old methods of perfecting the Taiwanese “boba tea”.

“I loved bringing this new idea to the Northwest,” said Patrice. “Bubble tea is currently the most famous drink in the world and a big draw for me. I have people from Bundoran, Buncrana and Malin Head to try out the menu. “

Driving a van is a world away from cooking in private kitchens, but Patrice loves being in front of the house. Even if it means that the daily goodies and 15/16 hour days are baked at 5 a.m.

“Not only coffee is served here on the side of the road. It’s different because I do everything myself, ”said Patrice.

It’s nice to talk to customers and get their feedback. It’s something completely different from what I was used to. “

Patrice’s pastries and treat boxes make a great shack, while she also offers healthy lunch options like baked potatoes and bagels. Their coffee is also a first for Donegal as it is imported by The Roasting Party in the UK.

Patrice adds, “My business is based on bringing new ideas and concepts to Donegal from around the world, something I think we need more than people following the sheep.”
